Spanakopita

I had a bunch of spinach that I didn't want to go bad, so I decided to make spanakopita. The problem I ran into was that there were so many recipes that I could have used that were so different, I didn't know where to start. In the end, I didn't end up following a recipe and it ended up tasting really good. Mind you it wasn't like it was an amazing-spanakopita-made-by-a-greek-with-secret-ingredients-and-love kind of good, but for my purposes it worked. I cut up all the spinach I had and boiled it, and fried one and a half chopped onions.When they were soft, I added the spinach and cooked them together for a bit. Then I took the pan off the heat and added 3 eggs and 6 oz of feta cheese. I covered the bottom with phyllo dough, added the inside and then covered the top with more phyllo dough. I really liked it, and since phyllo dough doesn't keep for that long I'll have to make some more soon. It was easy to make, and the phyllo dough was surprisingly easy to handle.



Verdict: I will definitely make them again, in smaller one serving pans, with more spinach inside and no phyllo dough on top.

    You should make an even BIGGER serving than this one so there are more leftovers!! :)
    And keep the phyllo dough! It was so yummy!
