I've been slacking off on the cooking through "Cooking Light", but that's what happens when you are really busy with school unfortunately. Anyways I used the Grilled Lemon-Basil Tofu recipe, as in I used the backbone of the recipe and then butchered the rest. Instead of a burger I used the tofu to make a wrap, I skipped out on the olive-garlic mayonnaise because I can't stand mayonnaise, and I didn't feel like taking out the electric grill, so I broiled the tofu instead. The marinade for the tofu itself wasn't very flavorful, it was very bland and I couldn't figure out what it was missing so I just left it. I topped the wrap with fresh vegetables and honey mustard sauce (to replace the mayonnaise). It was ok, but I probably wouldn't make it again. I'm trying to find a good marinade for tofu that doesn't involve soya sauce because I'm getting bored with cooking with soya sauce. Sadly, this is not it.
Grilled Lemon-Basil Tofu Burgers (p.316)
Verdict: Not my favorite marinade, but I can't really judge the whole recipe because I butchered it.
