Zucchini-Pecan Flaxseed Bread

I was in the mood to bake something today so I made some zucchini bread. It's made from white flour, whole wheat flour, flax seed, zucchinis, pecans, and a bunch of other spices. I split it into two loafs instead of one, and I will cut some up and freeze it for a quick breakfast on the go. I can't really figure out how to describe it ... it is cinnamon-y and sweet, but not too sweet. It's light, but also a little dense, perfect for a snack or breakfast. It got the approval from the family, so I have to say win! :)

Verdict: Super yummy and healthy. All around win!
