Tofu and Brussel Sprouts

Yikes! It has been forever since I've posted! I've been so busy lately with school and stuff that I just haven't had the time, nor will I again until late May once my finals are done. I'm just going to make a quick post about this recipe I tried because it was THAT good! Here is the link.

This recipe was different from the other stir fries I've made. It was sweet and tasty, and had the perfect mix of my favorite vegetables. I used a mix of Arctic Garden frozen vegetables (The brussel sprouts one and the corn and beans one). I didn't really measure anything ... I just did a rough estimation of everything. I added a lot more vegetables, swapped vegetable oil for olive oil, soya sauce for a low-sodium one and added some extra chili flakes. Knowing how I cook (mostly last minute), I didn't have any ginger so I skipped out on that and didn't add any other vegetables besides the frozen ones. It was DELICIOUS!!!! (Bonus: It also tastes great the next day cold!) I loved it and plan to make it again really soon.


Verdict: Super yummy and will make it again ASAP. Only I will add the vegetables sooner next time, since they are frozen.
