Mini Pumpkin Muffins

I made some mini pumpkin muffins today, and I have to say they are super cute. My mom bought these tiny pink cupcake papers and I used those to cook them. They made me very happy, but I digress. Sadly I was out of nutmeg, so I replaced it with half cinnamon and half all spice since I had to add them anyways. That being said there was something missing; it was missing its kick. So next time I make them (this weekend?) I'm going to double the amount of spices and add the nutmeg and see what that gives.

Verdict: Very moist and sweet, but missing some spice. Must double spices.
