Vegetarian Quesadilla

I was in the mood for Mexican food tonight, so I decided to make quesadillas. Instead of using a recipe, I made my own filling because I wasn't really in the mood for mixes they had. I basically threw together some kidney beans, tomatoes, onions, and cheese, put it on half of a tortilla and then in the oven it went at 375 for 9 minutes. I folded it in half and served it with salsa. It took a total of 13 minutes to make, a perfect meal for when I don't have much time to cook. Next time I'll put different kinds of vegetables with stronger flavors to make it a bit less bland (the salsa made it taste really good though).



Verdict: Great quick meal for when you're in a rush.
