Vegetarian Chili with TVP

Super Bowl Sunday only means one thing (besides football), and that thing is chili. When I ate meat one of my favorite dishes was red chili, so I really wanted to find a recipe that tasted like it. To my surprise, I found one that was strikingly similar (if not better) than the one I usually eat. It was a really simple recipe, and I adapted it a bit. I switched out canola oil for olive oil, skipped out on the mushrooms and corn and added TVP instead. I also cut out a lot of the cumin and added extra chili powder and some chili flecks. It was a little liquidy, so I homogenized it a bit and it resulted in a very flavorful and filling super. We served the chili with some rice and nachos, making for a true Super Bowl weekend!


Verdict: flavorful and delicious, will most definitely make it again!
